We’ll look at the beneficial and detrimental bacteria and yeasts that exist, and how they effect the final wine in the bottle. Cal Says: A great example of Victorian Neb. Precise and nervous across the pallet with a pretty florality underpinned by a saline and herbaceous base. A great summer red, give it 20 minutes of fridge time before opening. Works well with gamey meats and charcuterie, suitable to drink now and will happily cellar for another 5-10 years.
