We continue our exploration into the microscopic wine world, today we’re focusing on the microbial life in wine. We’ll look at the beneficial and detrimental bacteria and yeasts that exist,  and how they effect the final wine in the bottle. To discuss this, we are joined as always by BSC: Wine Science student Cal Lee


Wine of the week

2023 Oscar Hermann, Nebbiolo, Yarra Valley

Cal Says: A great example of Victorian Neb. Precise and nervous across the pallet with a pretty florality underpinned by a saline and herbaceous base. A great summer red, give it 20 minutes of fridge time before opening. Works well with gamey meats and charcuterie, suitable to drink now and will happily cellar for another 5-10 years.
