Wine Chat: Yeast

From bread to beer, yeast has been a core ingredient in the human diet since the start of agriculture. But what is it about yeast that makes it so integral to human food and drink, and are all yeasts created equally?

2023 Mighty Isle ‘Piccadilly’ Chardonnay, Adelaide Hills, S.A.
Cal says: Not for the faint of heart, this full bodied immaculately structured wine has undergone intentional pre-ferment oxidisation. Notes of Salted caramel, umami, grilled peaches and a scintillating acid line reward the brave adventurers. Pairs beautifully with rich protiens such as pork or fatty meats, but I think this wine shows best standing alone. Will happily cellar for up to ten years.
